Anyone else out there trying to get a jump on the holiday preparations? I’ve been trying to make cards and pick up gifts throughout the year so things won’t be so rushed during the holidays. Right now, I’m working on tags and gift-boxes for small gifts. I plan on baking cookies and filling the boxes so I can give them as teacher and neighbor gifts.
My favorite cookie recipe is one that has been in the family forever, so I have no idea where it came from originally. This is my dad’s favorite recipe! I’ll bake a few batches of these to give away in my custom-made boxes.
Lemon Squares (makes 20 squares):
½ cup butter
1 cup flour ¼ cup powdered sugar
¼ cup lemon juice
2 beaten eggs
2 tablespoons flour
½ teaspoon baking powder
Mix 1/ cup melted butter, 1 cup flour, and ¼ cup powdered sugar. Pat in 9 inch (or smaller) square pan. Bake 25 min at 350º (or until light brown). Mix ¼ cup fresh lemon juice, 1 cup sugar, 2 beaten eggs, 2 tablespoons flour, and ½ teaspoon baking powder. Pour over cooked bottom. Cook for approximately 30 minutes and sprinkle the top with 4x powdered sugar while still warm.
